The best choice depends on the flavor, texture and cooking method you prefer. Our local fish selection changes throughout the year based on the season, weather, fishing conditions and what is arriving at the dock.

Find the Right Fish for Your Meal

  • Mild and Flaky

    Snapper, hogfish, triggerfish, porgy and lionfish offer a clean, mild flavor with a tender, flaky texture. These approachable fish are excellent baked, sautéed, pan-seared, fried or served in fish tacos.

  • Firm and Versatile

    Grouper, tilefish, cobia, mahi-mahi, amberjack and African pompano have a firmer texture that holds together well during cooking. They are great choices for grilling, roasting, blackening, sandwiches and hearty seafood dishes.

  • Meaty and Steak-Like

    Tuna, swordfish and wahoo have a dense, substantial texture. These fish are especially well suited for grilling, searing, kebabs, seafood bowls and thick, center-of-the-plate portions.

  • Rich and Buttery

    Faroe Island salmon and select deep-water fish offer a richer flavor and tender texture. They pair especially well with roasting, grilling, pan-searing, citrus, herbs and seasoned butter.

  • Whole Fish and Specialty Cuts

    Whole fish, collars, grouper cheeks and fish heads offer flavorful alternatives to traditional fillets. Depending on the cut, they can be grilled, roasted, fried or used to prepare seafood broths and stocks.

How Much Fish Should I Order?

Plan on approximately 6–8 ounces of fish per adult when serving it as the main course.

One pound of fish generally provides two generous entrées or three lighter portions. Consider ordering additional fish for larger portions, leftovers, tacos, sandwiches or seafood salads.

Selected and Prepared for Your Order

Our team hand-selects the best available fish to fulfill each order. We take pride in how our seafood is handled and will not send customers anything we would not be happy to take home and eat ourselves.

Fish fillets are cut to order, deboned and vacuum sealed to help preserve their quality during delivery. We still recommend carefully checking each fillet before cooking in case a small bone was missed.

Whole-fish preparation varies by product. Review the individual listing to see whether the fish will arrive whole, scaled, cleaned or otherwise prepared.

Fresh From the Dock to Your Door

Our local selection reflects what fishermen are catching and bringing to the dock. That means certain species may be abundant one week and unavailable the next.

When a local favorite is available, ordering early is the best way to secure it. We also carry select premium fish from outside the Florida Keys, including Faroe Island salmon, to provide additional options throughout the year.

Easy to Prepare at Home

Fresh fish does not need to be complicated. Most fillets can be grilled, baked, broiled, sautéed, blackened or pan-seared with simple seasonings.

For a true Florida Keys-style meal, pair your fish with citrus, fresh herbs, olive oil, garlic butter or one of our gourmet seasoned butters. Avoid overcooking so the fish stays moist and tender.

Fresh Fish FAQs

Is the fish fresh or frozen?

Our fish is cut fresh to order and vacuum sealed. When your selected shipping date is four or more days after the order is placed, the fish may be vacuum sealed and frozen fresh to help preserve its quality for delivery.

Is all of the fish caught in the Florida Keys?

Many of our fish are wild-caught by local fishermen and brought directly to our Stock Island dock. We also carry select premium fish from outside the Florida Keys, such as Faroe Island salmon. Check the individual product page for species and sourcing details.

What is the best fish for grilling?

Firm fish such as grouper, mahi-mahi, cobia, tuna, swordfish and wahoo hold together especially well on the grill. Thicker fillets and portions are generally easier to turn without breaking apart.

Which fish have the mildest flavor?

Snapper, hogfish, triggerfish and porgy are excellent choices for customers who prefer mild, clean-tasting fish. They work well with simple seasonings, citrus and light sauces.

Are the bones removed from the fillets?

Yes. We remove the bones when preparing our fish fillets. However, because fish is a natural product, we recommend checking each portion carefully before cooking.

Can I order whole fish?

Whole fish are available for selected species and sizes. Preparation varies, so review the individual product listing to see whether the fish will arrive scaled, cleaned or otherwise prepared.

Why are some fish sold out?

Our local selection depends on the season, weather, fishing conditions and current catch. Some species may sell out quickly and remain unavailable until more fish arrive at the dock.

How is fresh fish packaged?

Fish is vacuum sealed and packed inside an insulated cooler with ice packs to help keep it cold and protected during transit. Refrigerate or freeze your seafood promptly after delivery.

Does Keys Fresh ship fish nationwide?

Keys Fresh uses FedEx Priority Overnight to ship seafood throughout the lower 48 states. Available delivery dates and shipping costs are shown during checkout.

What should I do if there is a problem with my delivery?

Please call 305-879-9335 or email info@keysfreshseafood.com within two hours of delivery. Include photos and a brief description of the issue so our team can assess the shipment and help make it right.
