Fish Collars (PER LB)

A very overlooked cut of any fish. The collar is cheaper than the fillet but tastes just as good if not better! Cooking the collar with the bones in keeps the meat from drying out which makes it difficult to overcook. Some popular preparations include: grilling, frying and making into a soup or chowder. But the options are endless.
