Shrimp Buying Guide

From classic Key West Pink Shrimp to sweet, tender Royal Reds, each variety offers a different flavor, texture and preparation. Choose shell-on shrimp for grilling, boiling and peel-and-eat platters, or peeled-and-deveined shrimp for quick, convenient meals.

Find the Right Shrimp for Your Meal

  • Key West Pink Shrimp

Caught in the shallow Gulf waters north of Key West, Key West Pink Shrimp are known for their sweet, mild flavor and firm, tender texture. They are an excellent all-purpose shrimp for grilling, sautéing, boiling, frying, shrimp tacos, pasta, seafood boils and traditional peel-and-eat platters. Choose from several count sizes, along with shell-on and head-on options.

  • Royal Red Shrimp

Royal Red Shrimp are harvested from deep waters and prized for their delicate texture and rich, naturally sweet flavor. They are often compared to lobster and are especially good with butter, garlic, citrus and simple seasonings. Our shell-on Royal Reds arrive deveined for easier preparation. Peeled-and-deveined Royal Reds are also available for customers who want the flavor without the additional prep. Royal Reds are wild-caught and seasonal. When locally sourced Royal Reds are unavailable, we may provide premium Argentine Red Shrimp of comparable size and quality. Review the individual product listing for complete details.

  • Peeled and Deveined Shrimp

Peeled-and-deveined shrimp offer the most convenient option for cooking at home. With the shell and vein already removed, they can go directly into pasta, tacos, stir-fries, curries, seafood bowls or a quick skillet sauté. Choose peeled-and-deveined Key West Pink Shrimp for a firm, versatile bite or Royal Reds for a softer, richer texture.

  • Shell-On and Head-On Shrimp

Shell-on shrimp are ideal for grilling, boiling and peel-and-eat preparations. Cooking shrimp in the shell helps protect the delicate meat and creates a traditional seafood presentation. Head-on shrimp provide even more flavor for seafood boils, soups, stocks and sauces. Because the head and shell contribute to the total weight, plan on a slightly larger portion than you would with peeled shrimp.

Understanding Shrimp Count Sizes

Shrimp sizes are expressed as the approximate number of shrimp contained in one pound. A lower count means each shrimp is larger.

  • U12

Fewer than 12 shrimp per pound

  • 10/15

    Approximately 10–15 shrimp per pound

  • 16/20

    Approximately 16–20 shrimp per pound

  • 21/25

    Approximately 21–25 shrimp per pound

  • 26/30

    Approximately 26–30 shrimp per pound

  • 40/50

    Approximately 40–50 shrimp per pound

Counts are approximate, and natural variation will occur.

Larger shrimp are excellent for grilling, shrimp cocktail and impressive entrées. Mid-sized shrimp are versatile enough for nearly any recipe, while smaller counts work well in pasta, salads, dips and dishes where shrimp are mixed with other ingredients.

How Much Shrimp Should I Order?

Plan on approximately one-half pound of peeled shrimp per adult when serving shrimp as the main course.

For shell-on or head-on shrimp, consider ordering approximately one-half to three-quarters of a pound per adult to account for the shell and head weight.

When serving shrimp as an appetizer or as part of a larger seafood spread, approximately one-quarter pound per person is a good starting point.

Uncooked and Ready to Prepare

Our whole, shell-on and peeled-and-deveined shrimp are delivered uncooked. Shrimp cooks quickly and is ready when the meat becomes opaque and firm.

Avoid overcooking, especially with delicate Royal Reds. Grill, boil, steam, fry or sauté the shrimp just until cooked through.

Ready-to-Eat Key West Pink Shrimp Salad

Our Key West Pink Shrimp Salad is prepared in small batches with sweet, wild-caught shrimp and simple, flavorful ingredients.

Serve it chilled on a roll, over greens, with crackers or straight from the container for an easy lunch or appetizer. No cooking or additional preparation is required.

Shrimp FAQs

What is the difference between Key West Pink Shrimp and Royal Red Shrimp?

Key West Pink Shrimp have a sweet, mild flavor and a firm, tender texture that works well in almost any shrimp recipe.

Royal Red Shrimp are softer, richer and more buttery, with a pronounced sweetness often compared to lobster.

What do shrimp count sizes mean?

The count indicates approximately how many shrimp come in one pound. For example, 16/20 shrimp contain approximately 16–20 shrimp per pound.

The lower the count, the larger the individual shrimp.

What shrimp size should I order?

Choose 10/15 or 16/20 shrimp for grilling, shrimp cocktail, entrées and impressive presentations. Sizes such as 21/25 and 26/30 are versatile choices for pasta, tacos, sautéing and seafood boils.

Smaller 40/50 shrimp are well suited for salads, dips and recipes where shrimp are mixed with other ingredients.

Should I choose shell-on or peeled-and-deveined shrimp?

Choose shell-on shrimp for grilling, boiling, seafood boils and peel-and-eat platters. The shell protects the meat during cooking and provides a traditional presentation.

Choose peeled-and-deveined shrimp when convenience is most important or when preparing pasta, tacos, stir-fries and quick weeknight meals.

What is the benefit of head-on shrimp?

Head-on shrimp are especially flavorful and work well in seafood boils, soups, stocks and sauces. They also create an authentic dock-to-table presentation.

The head contributes to the total product weight, so head-on shrimp provide less edible meat per pound than peeled shrimp.

Are Keys Fresh shrimp already cooked?

No. Key West Pink Shrimp, Royal Red Shrimp and our peeled-and-deveined varieties are delivered uncooked and must be cooked before serving.
