This quick, spicy, flavor-packed pasta brings a taste of the Keys to your kitchen. Sweet chunks of Florida Lobster meet juicy tomatoes, garlic, and basil for a light, fresh meal that’s perfect any night of the week, but especially a Sunday dinner.

Florida Lobster Fra Diavolo with Pasta

Ingredients

  • 1 Pound Florida Lobster Meat

  • 2 Tbsp Olive Oil

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes in juice (I add a can of San Marzano peeled tomatoes too)
  • 1 tsp dried basil (or 1 Tbsp fresh, chopped)
  • ¼ tsp crushed red pepper flakes or more
  • Salt, to taste
  • 1 lb cooked Florida Lobster meat (I chop the shells and add in the sauce)
  • 2 tsp red wine vinegar
  • 8 oz linguine or spaghetti
  • Freshly grated Parmesan, for serving

Directions

  1. In a large deep skillet, heat olive oil over medium heat.
  2. Add onion and sauté until soft, about 3 minutes. Add garlic and cook for another minute.
  3. Stir in tomatoes with their juice, basil, red pepper flakes, and a pinch of salt.
  4. Bring to a gentle simmer and cook for 5-7 minutes, or until slightly thickened.
  5. Add chopped Florida Lobster and vinegar. Stir gently and cook for 4-5 minutes, just until the lobster is warmed through.
  6. Toss with cooked linguine and sprinkle generously with Parmesan before serving.
