Baked Butterflied snapper
The baked butterflied snapper is a fresh, fast, and easy meal that can be prepared with almost any type of snapper (yellowtail, yellow eye, red snapper, etc). This dish is perfect for busy weeknights when you don't have time to spend hours in the kitchen. Simply butterfly the snapper, add on some toppings and bake it in the oven until it's cooked to perfection.
2 whole snapper 1-2lbs (yellow eye, yellowtail, red snapper, etc)
cows rule key lime butter
salt and pepper
1 thinly sliced lime
1 sliced green bell pepper
1 thinly sliced jalapeno
grape tomato’s quartered
start by preheating oven to 375
butterfly snapper by removing spine and flattening
rub whole fish in olive oil and place skin down on a baking tray
add salt pepper and garlic to the top of snapper
cut cows rule key lime butter into small cubes and place on snapper
add toppings to the fish, we recommend doing the two snapper differently (ex. one with jalapeno, lime slices, and bell pepper.)
place tray into the preheated oven and bake for 10-15 or until thoroughly cooked through.
remove from oven and allow to cool then enjoy!
